Winter Root Veggies with a Honey, Garlic, and Balsamic Drizzle, Potatoes with Caramelized Shallots and Goat Cheese, and Herby Roasted Chicken



Happy New Year!


I'm starting this year strong and I'm excited for what I have planned. Part of those plans are content for my YouTube channel, the first of which is a DELICIOUS winter meal. When I tell you that this meal was SO TASTY... and it was incredibly easy to make.



Here are the recipes for each:


Preheat the oven to 375°F.


Winter Root Veggies with a Honey, Garlic, and Balsamic Drizzle

Roast Vegetables

1 parsnip

1 red beet

1 golden beet

1 rutabaga

Olive oil

Salt and pepper to taste


Drizzle

3 Tbsp balsamic vinegar

3 Tbsp olive oil

2 Tbsp honey

4-5 cloves of garlic

2 tsp Dijon mustard

1 tsp garlic powder

1/2 a shallot

1/4 tsp salt

1/4 tsp pepper


Preheat the oven to 375°F. Chop parsnip, beets, and rutabaga into half inch to 1 inch cubes, and add to a roasting pan and toss with olive oil, salt and pepper. Roast for 40-60 minutes until tender.


In a blender cup add balsamic vinegar, olive oil, honey, garlic, mustard, garlic powder, shallot, salt, and pepper, and blend until smooth.


Drizzle sauce over roast veggies and enjoy!


Potatoes with Caramelized Shallots and Goat Cheese

1 lb fingerling potatoes or purple potatoes

Olive oil

1 tsp garlic powder

Salt and pepper to taste

Goat cheese crumbles



Cut potatoes in 1 inch wide pieces, and toss with olive oil, garlic powder, salt, and pepper in a roasting pan or baking dish. Roast for 40 minutes.


Top with caramelized shallots and crumbled goat cheese.


Herby Roast Chicken Thighs

2 lbs of chicken thighs

1/3 Yellow onion

3 sprigs of fresh rosemary

1 Tbsp of fresh thyme

6 fresh sage leaves

5-7 garlic cloves

2 Tbsp butter

Smokey salt and pepper to taste


Add a layer of parchment paper to the roasting pan. Layer rosemary sprigs, layers of sliced yellow onion, fresh thyme and sage leaves. Chop garlic cloves in half and add to the pan. Layer chicken thighs on top of herbs and onions, and sprinkle with smokey salt and pepper. Add slices of butter on top of the chicken thighs. Roast for 40 minutes, periodically brushing the melted butter on top of the chicken.
